Courgette and Tarragon soup


 I was looking for something easy to make and  quick to prepare. New Covent Garden Food Co. ( A Soup for Every Day ).This book has just that in abundance and if you like soup then its perfect for you. We love courgettes so it was easy to choose this recipe. And only four ingredient. I. was not sure about the tarragon but jumped in and gave it a go. It is a sublime combination, so smooth and filling. And the tarragon takes it to another level. Pete and Graham were raving about it for days after we had it. I have already been down the shops to purchase the necessary ingredients for next time.

Serves 6 and takes a whole 35 minutes to make
Ingredients

25g butter4 medium courgettes, chunked
1-2 tablespoons tarragon, chopped
300ml vegetable stock
300l milk

* melt the butter in a saucepan, add the courgettes. then cook gently for 5 -minutes

* add tarragon, then cook gently for a further 5-minues

* add the stock, which should almost cover the courgettes bring to the boil, then cover and simmer for 15 minutes until the courgettes are tender

* add the milk, then blend until smooth

* season to taste, then reheat gently for 3 minutes and serve.
