Italian Orzo Spinach Soup


After an amazing Christmas meal cooked by my son David. A plate of home made Yorkshires roasted beef, potatoes cooked to perfection and of course carrots and parsnips. the best part was the gravy which was rich and tasty.

After a day of eating we try to have a light meal on boxing day, and give our stomach a break from eating a huge meal . I found this recipe for soup, it did not disappoint. It has loads of flavour, and is so satisfying to eat.  The Orzo cooks up soft and soaks up all the flavour from the dish.

It is easy to make and does not take ages to prepare.     Enjoy


Ingredients

1 cup of carrots ( I bought the ready cleaned bag with carrot sticks and cut them into cube

s)
1 cup of celery.

I have a stash of Italian herbs and garlic salt mixed together in a container. You can use dried oregano, rosemary and thyme.

4 cups of spinach, loosely packed

1 white onion

1 can tomatoes

Chicken or vegetable stock

1 1/2 cups of Orzo pasta

2 tbsp olive oil




Directions

Heat oil on a large stockpot over medium heat

Add onion and herbs saute for 4 minutes

Add carrots and celery saute for 3 minutes

Add chicken stock, tomatoes, orzo

Bring soup to simmer stirring occasionally. Reduce heat to med-low and simmer for 10 minutes stirring occasionally, until orzo is al dente.
