Asparagus, Leek and New Potato Chowder



You just have to give this soup a try, a few  ingredients and +- 35 minutes to make. It is so satisfying to eat and tastes soooo good. The fusion of flavours is perfect.

Serves 4

Ingredients

25g butter                                                    50ml single cream

1 leek finely sliced                                     1 tablespoon of parsley finely chopped ( I forgot to use)

250g new potatoes halved ( don't peel just wash before cutting)

500ml vegetable stock

500g asparagus, trimmed and cut into thin slices

half a teaspoon of tarragon, finely chopped

Melt butter in pan, add the leek, then cook for 5 minutes until soft

Add the potatoes and stock, then bring to the boil. Cover then simmer gently for +- 15 minutes until potatoes are almost tender

Stir in the asparagus and tarragon, then cook for further 3-5 minutes until asparagus is tender

Blend the soup - keep it rough don't blend until smooth

Season to taste, serve and drizzle the cream on top
