Sausage & bean one pot meal



Pete and Graham work long hours and this time of year it is dark when they get home. I am always on the look out for a warm , hearty meal for them to sit down to.  And as I had chipolata sausages defrosted, the recipe would have to have sausages in.

I found this recipe on the internet bbc good food. It had to be adjusted to suit the groceries in the cupboard. The original recipe had 1 carrot, roughly chopped in the ingredients list. If you have one in the fridge then add it in when you add the leeks.




Recipe


1 tbsp. olive oil
8 good quality sausages. I used chipolata sausage and cut them in half
2 leeks, trimmed and thinly sliced
1 tbsp. sage chopped
1 garlic glove
200 ml beef stock (I used oxo cubes)
400g chopped can tomatoes
2 x 400g cannellini beans. rinsed and dried

Method




1. Heat oil in a large pan, add the sausages and brown.
2. Remove from the heat
3. Add the leeks and gently soften
4. Add sage and garlic to the pan, cook for a couple of minutes
5. Add tomatoes and stock. Place sausages back into the pan and stir in the beans. cook until sausages are cooked through.
6. Grate cheese on top and stir in and simmer for another few minutes

When dish up grate some more cheese on top of finished dish.
